The Merand DIV-X divider is very suitable for dividing any type of dough. Even with long fermentation and highly hydrated, such as rustic breads, ciabatta, small rolls, etc.
The hydraulic divider has a square tank through which 20 equal pieces of dough can be distributed. In addition, it comes with an additional grid holder that makes dividing and forming at the same time, depending on the chosen grid. There are more than 30 grids within the range, from 4 to 60 divisions, even grids for triangle shapes. All these grids are made of stainless steel and are teflon coated to prevent the dough from sticking.
In addition to these grids there is also a grid for simultaneously dividing and forming 10 baguettes, namely the patented Alvéform® system. Here the “V” forming system ensures that the dough is squeezed in the same way as when forming by hand. The Alvéoform® system gives a nice curved shape under the baguette. This is supplied with the Atoupains type and is available in 8 or 10 divisions.
